Our cheesemaker's name is Franck with a "c" because he was born in Normandy, France. He’s an Australian now and was officially anointed as such in 1998. We adopted him to make our cheese. The French really know how to make good cheese and Franck’s team try to make the best cheese in the world. They recently won the highest-ranking blue cheese at the World Cheese Championship – one of the world’s toughest international cheese competitions in the United States of America and were awarded four gold medals in the “Guild of Fine Foods World Cheese Awards” last year beating the French “Brie de Meaux’. Franck is a cheese freak. You could say he lives for cheese. He meticulously practises the art of fine-tuning cheese.
His right hand man is Shane Adamiak. He is a local with twelve years of experience in making cheese. Shane’s daily work is checking that the cheese is made correctly. Shane controls the quality of the Old Telegraph Road range, ensuring the high standards for Old Telegraph Road are met.
