Franck and the team wanted to show irrefutable proof on the OTR packaging that we don’t release Old Telegraph Road until it is absolutely perfect for eating; not a moment too soon – ripe, mature and superbly special in taste and flavour. We are so particular about when our cheese is released we have put a cheesemakers’ guarantee on our cheese – a numbered red rosette stamped by the Jindi team when they agree it is ready to eat. It is our promise to you, OTR is only available when it is the best it can possibly be.

Old Telegraph Road is released after it has been maturing in the factory cellars for a sufficient amount of time. The French call this art of ageing the cheese "affinage". It is in the affinage that the magic happens. Franck is the only one out of the Old Telegraph Road cheese making team who can properly pronounce it but they all understand how important it is. Did you know the size of the cheese wheel is crucial to the quality and maturity of the final cheese? There is an exact size a cheese wheel should be to maximise peak maturation and ensure exceptional quality. Needless to say, Old Telegraph Road cheeses are all made in the appropriate size. Just for the record it’s 34 cm in diameter for the OTR Brie. When you go into your local deli or gourmet food store to buy Old Telegraph Road you can see the size of the wheel on display.

Franck makes sure that decisions are made without compromising the quality of the “Old Telegraph Road” range. This means that under no circumstances is the cheese released before its optimum age. Old Telegraph Road is made by the following rules enforced by Franck:

Rule 1 : Only the best quality cheese will be selected for the Old Telegraph Road range.

Rule 2 : Old Telegraph Road cheese will not be released when immature or overripe – it has to be just right.
